Bromelins are natural enzymes found in pineapple that digest protein, up to 900 times their weight. They have been used in the treatment of pancreatic insufficiency, as a substitute for enzymes released by the pancreas that digest protein, as well as in weight control, to reduce cholesterol, for elimination of deposits in such conditions as cellulitis, and as a diuretic for the regulation of fluids. Bromelins are commonly used to relieve the sensation of bloating after large meals including a great deal of meat. They are taken in tablet form. Fresh pineapple contains bromelins, but these enzymes tend to break down during the drying and processing of candied or dried pineapple chunks.
